Tuna Salad Stuffed Tomatoes

Tuna1I believe in my heart that there is never a wrong time for tuna salad. Sometimes circumstances make it the *perfect* time for tuna salad as a matter of fact. For instance, when you have no fresh meat in the fridge. Tuna can be kept indefinitely in the pantry just waiting for you to run out of chicken breasts. Maybe you don’t have time to cook anything. Tuna is ready-to-eat! It’s a really great last-minute-decision meal that can be made in a hurry. Tuna salad is never a problem because tuna can be mixed with just about anything you have in the fridge at the time. Chopped veggies, fruit, nuts, olives, pickles, cheese, and condiments such as mustard, Dijon, vinegar, mayo, or salad dressing. My personal favorite combination is salty mixed with sweet, such as pickle juice, blue cheese, chopped kiwi and pecans. (No that’s not weird!) I haven’t found a combination that doesn’t work well with tuna, as long as you choose healthy, natural foods. (more…)

Turkey Chili with Mini Cornbread Muffins


It’s December and the weather outside is frightful, but nothing warms you up like a warm, chunky bowl of chili. Chili is one of those recipes that you can almost always throw together with any ingredients you happen to have on hand. My chili happened to have zucchini, pinto beans, bell pepper, and jalapeños because that’s what I had, but your chili can be anything you want it to be! The only real necessities for a classic chili are a good ground meat and some type of sauce. This recipe calls for ground turkey, but beef is always acceptable! It’s really a matter of preference. When I’m trying to keep calories low, I choose turkey because it has roughly half the amount of calories and quite a bit more protein than ground beef. (more…)

arms1Working behind a desk isn’t a glamorous life. It can be dull and repetitive, and the printer jams no less than 17 times per day. It’s like The Office, but less funny and more mind-numbingly boring. But if it weren’t for desk workers like myself and the other several million of us, nothing would get done! Boring office work is where everything starts, usually as an email or a stack of papers in a file cabinet. We work tirelessly behind the scenes, the unsung heroes who plan infrastructure, edit textbooks, create digital media, file taxes, or provide customer service. The number of desk jobs in America is staggering, and there is one major drawback to go along with each and every one of them.

Millions of Americans are sitting all day, every single day on their sad, flat butts, letting their backs, wrists, and retinas suffer the consequences. The human body was not meant to sit for 8 to 10 hours a day in front of a computer. Add in the time you sit in the car, sit at the dinner table, and sit in front of the TV, and the average American is lucky to be mobile for even 2 to 3 hours a day! (more…)

Healthy Wild Blueberry Muffins


bluemuffs1Sometimes you just need a muffin. But not one of those 500 calorie, vegetable oil and preservative filled muffins you find at the checkout at CVS. No, those muffins are a trap! A muffin-top waiting to happen. Sometimes you just need a healthy muffin with quality ingredients that tastes good and can be whipped up in a flash. These muffins came out looking a little radioactive, but they’re actually quite the opposite! These tasty purple muffins pack a lot of nutrition in a few bites. (more…)
